Biscoff Goodness

A few weeks ago I was seeing out in cyber land different kinds of cookies stuffed with Nutella. I love Nutella and I enjoyed trying out Bake @ 350's Nutella stuffed chocolate chip cookies. They were of course YUMMY!

Well lately we have been enjoying the goodness of Biscoff Spread.

 If you have not tried it you should go buy you some today!

I thought that a ginger cookie stuffed with Biscoff would be amazing so here is what I did.

First you need to make some Biscoff Chips.

- Scoop out some Biscoff on a piece of saran wrap. Using the bullet method. This is a no mess icing trick you can see Karen's video right here.



- Twist up the ends



-Thread into piping bad and cut off the end of saran wrap and you are ready to go.



-Place waxing paper or parchment paper on a pan and squeeze out at least teaspoon size chips on     parchment and then put in freezer for at least 30 minutes.



-You can then make your ginger cookies, my recipe will be at the end.
-Roll out teaspoon sized balls.



- Working fast, take chips out of freezer and slightly flatten one ball of dough, place chip on top



- Sandwich another slightly flatten ball of dough on top and then roll around in your hand to make finished ball.



- Roll in sugar and put on cookie sheet.



Bake and enjoy the Biscoff goodness!!!



With any of these stuffed cookies I have found that your ratio of filling to dough is really important if you have to much cookie to filling the filling kind of bakes into the cookie. The smaller I made the cookie the better result I had.
The ginger cookie I used is actually a recipe that I have had for years from my brother. It has been called "Friendship Cookie" and believe me if you make them and give them away, you will make some new friends!! It is an awesome cookie for fall and Christmas. It is like a soft chewy version of a ginger snap and is so delicious. This batch made at least 3 1/2 dozen of cookies and my husband downed almost all of them in a weekend!


"Ginger aka Friendship Cookies" 
-Alvin Brown

2 C. flour
1/2 tsp. ground gloves
1/2 tsp. ground ginger
2 tsp. cinnamon
2 tsp. baking Soda
1 C. Sugar
1 egg
3/4 C. margarine or butter
4 Tbsp. molasses

Preheat oven to 350 degrees. Sift first five ingredients into a bowl. Cream butter, sugar, add egg molasses and mix well. Add wet ingredients into dry and mix together. Roll into balls and dip in sugar. Bake on parchment lined cookie sheet for 10 minutes. Makes 3 to 4 dozen.

Double Trouble = Joe & Noelle

Cute Joe and Noelle round out the family of 9 of my older brother Robert. That is right, Robert and Nina have 7 children. Now I am not sure they had that number in mind when they got married and I thought they were done at 5 and I think most everyone else thought that too and maybe Robert and Nina thought that as well. They had 5 kids pretty fast and life was going on for the Southern Brown clan. (My brother lived in South Carolina for a long time so my family referred to them as the Southern Brown's) Well when Angela, the youngest, at the time was 9 years old Nina was surprised to find out she was pregnant and then surprise again she was pregnant with twins.

I mentioned they were in South Carolina at the time so our family to get see much of them for many years. I may be embellishing a lot of this story but I think the last few months of pregnancy were pretty hard on Nina but finally the twins made their debut on August 18th. Now most twins are pretty small you know like 4-6 pounds each but Joe and Noelle were somewhere between 7-9 pounds each. I give special props to Nina, she is an amazing, strong woman to be able to give birth to them. I mean I thought I was dying give birth to a 6 pound baby and she had twins that were bother bigger than that!

Last Saturday we got to drive down to their house to personally deliver the cookies. The kids were busy playing water games with their friends when we arrived. They took some time out to see their cookies. It was so fun to get to see their faces when they opened up the cookies and they were so grateful for them.

I have no idea why I named this post Double Trouble because these twins are not any trouble at all, at least not to me!

Noelle is quiet and kind and she is willing to play with my children which I think is great because they don't have any cousins their age and sometimes they get left out when our family gets altogether and it's nice to see when older kids are willing to invite the younger ones to join.

Noelle has a talent for piano playing and this has become a hobby of hers.



Her mother said she was really into mermaids so I was too lazy to do the whole body and face of a mermaid and thought I would just simplify my life by making tails. I think they turned out quite cute. I used the lace embroider technique for the scales.



Another love of Noelle's is the Monster High Dolls. I researched these dolls and they are dolls inspired from monster movies and horror fiction. They are have long beautiful hair and thought it would be fun to do a cookie form of them but again i just went the simple route and did the hair bow skull that is part of the logo.

Joe also is a pretty quiet kid, when he was younger sometimes he wouldn't even answer me when I would ask him questions. He is so dang cute especially when you are able to get a smile to stretch out across his face! Joe also is really good to play with my kids especially my son and my son LOVES to go to Joe's house cause he has the coolest Ninjago Lego's!

Joe loves most sports but his favs are baseball and football! He sounds a little bit like his two oldest brother's who both liked to play those sports.



I was really happy to get to make these Ninjago Lego cookies for Joe because I have been seeing them all over the internet and was happy to get to try them out. One of Joe favorite things is Ninjago and it was really fun to make them.
My son was happy too cause I made him an extra ninja cookie for him.
While I was decorating them my son was very helpful in telling me all about them. Which one was which, their names, and how cool ninja's are even got to see some ninja moves!

If you wondered..... in the picture below from top to bottom we have Zane, Kai and Cole. I loved how their eyebrows are all different.



Also threw in a few mini lego cookies.

Happy Birthday Joe and Noelle! You two are awesome and our family looks forward to many more play times together!

Man of Steel in many ways! - Karl

I mailed Karl's cookies last week and I sure hope that they made it with out breaking into pieces. :)

Karl is the fourth child of my oldest sister Vanae.  Karl is a great guy, I think he is kind of quiet and reserved, but I also have seen that he is a definite competitor.

A wonderful memory I have of Karl is when I attended his mission farewell which I think was the same weekend as a family reunion. Anyway, probably does not really matter.  For those of you who don't know I was a biker chick.  Yes I was, and I loved every minute of it!

I sold my bike after I got married with full intentions of buying a bigger bike in the future. That future has not arrived yet, but I still fully plan on making that happen!

Anyway Karl also is a lover of motorcycles and during that weekend we decided to switch bikes and go for a little ride together. As you can see my bike was a cruiser and Karl's bike at the time was a bullet bike. I don't remember a ton about that day, but I can tell you that I was pretty nervous to ride a bullet bike, but I did not let Karl know that. At least I think I didn't, but maybe he did notice, but just never said anything. I was nervous that I might crash the bike, they are totally different especially how you sit on one and I was afraid I may just lose control and crash. It ended up great, I survived and did not put a scratch on it. But most of all I got to go on an enjoyable ride with my nephew through Nevada terrain. I am pretty sure someone took a picture of us before we took off that day, but I am not sure and if that family member is reading this maybe you can send me a copy of it!

Side note I have to mention is I left my bike with my younger brother Brant after the weekend and got a ride back up north with my sister because I did not want to ride it all the way home. Well a few days later I get a call from my brother and he crashed my bike while he and his wife took it out for a ride on his birthday! Not a happy birthday for him and I was just happy that there were no serious injuries.

Karl has always been a fan of Superman, many a times when he would come with his family to visit his grandparents he would be sporting a Superman T-shirt so I had to make a superman cookie!

He is still playing Superman, maybe not by apprehending criminals, well actually he does have a job at the jail, but he is also attending nursing school which I think is an awesome way to play superman! Helping others is so rewarding, and he is going to do a great job when he is done.



Karl's mom said he does enjoy doughnuts, and to be exact, chocolate doughnuts with chocolate icing. I don't think he eats these too often though, as he is one fit young man in my opinion. He in no way resembles the doughnut lover, Homer Simpson! :)



Of course I had to pay a little tribute to his love of motorcycles. I need to work on figuring out how to better decorate these cookies, I love them the least.



And some dumbbells to show that he loves to lift weights. I wish my husband did. ;-)

Tough but Soft = Andrew

Andrew's birthday was on Monday and I totally meant to get his post done while I was visiting my parents, but of course I didn't. I may not accomplish everything on time, but procrastination is something that I accomplish all the time. :o)


Andrew is the baby of my oldest sister Vanae. The weather lately has been ranging from 92-100 degrees and I can only imagine how much fun it must have been for my sister to be 9 months pregnant through the end of July. Glad it was her and not me!


Andrew is quite the character. He loves to tease people and get reactions from others. Which is where the profile cookies come into play. In the past few years Andrew finds a way to get a reaction and mostly from his extended family. He does this through hair. Dying it, shaving it into a mohawk, or growing a TON of it on his face!
Back in May we had our family reunion and Andrew was sporting a very tall mohawk for the event. I actually thought it looked pretty good. I am sure that he got some funny comments about it, but not from me. His sister, a few weeks ago, posted a picture after cutting his hair and styling it into a mohawk and she had a perfect profile. So I downloaded it because it was going to be great for his birthday cookies.





Another love or favorite for Andrew is Star Wars, but I guess to be more accurate he likes the new Clone Wars series. But hey Star Wars is Star Wars, right?!





His next love is something we have in common, and that is motorcycles. I wish I still had mine, but someday maybe I will get to ride again, or maybe I can drive Andrew's the next time I am in his city visiting! ;o)

Another love of Andrew is peaches and his mother said he loves the candy peach rings. I think these peaches might be good enough to eat. 





And something that I want to share about Andrew that is just peachy, is that he is a really good guy. He may act all rough and tough on the outside, but I have seen him interact with his nieces and nephews and he is quite the soft and sweet guy. He is lucky that his older sister lets him live with her family in their home, and I think it probably has been good for him and hopefully preparing him for what may come in his future. ;o)
I am sure that it is hard to have extended family living with you at times, but I am sure that having Andrew around has proven to be very helpful to his sister. There will come the day when Andrew moves on and his sweet niece and nephew will be very sad that Uncle Andrew is not there to help out and play with them as he often does.

Bride Groom

Probably about 6 months ago I saw wedding cookies all over the web and I really wanted to try some of the tux and dress wedding cookies I have been seeing. But nobody I knew was getting married.

So June rolled around and my nephew Dalton got engaged!! I was so excited I was going to try out the cookies. I thought I would make some for Dalton's luncheon. My sister was pretty busy with her mother-in-law passing and she was in charge of girls camp for her church congregation and then the wedding, she had a lot going on. So I called her one day and asked if I could help with anything. She asked me to make some butter cream mints for the open house. I then asked if I could help with the luncheoun and she said I could bring some cookies. I said "oh good, I was going to bring some decorated cookies whether you wanting me to or not!" :o)



I must say that I had the most fun decorating these cookies. I think they are just so stinking cute.



This time I used fondant to cover the cookie and then used royal icing to to the detail work.



These are perfect for a wedding or luncheon or a bridal shower party.





Dalton and Amanda's colors were purple and orange which seems to be a popular color scheme for weddings lately.
